Fine-grained salt extracted from salt mines, with a lower moisture content than sea salt. Rock salt, also called halite, has a higher level of sodium chloride and a finer grain size. It is most often used in a salt blend with coarse sea salt to improve the quality of the fish. Store dry and indoors.
