What is Sasomix?

Sasomix is a ready-mixed salt and sugar product for processing fish and roe. The standard blend contains about 33 percent sugar, and custom blends can be made with as little as 10 percent sugar on request. For dry salting, it is common to use around 30 percent sugar and 70 percent salt. You can choose between vacuum salt (PDV) and granulated salt as the base of the blend.

Why salt and sugar work together

In dry salting, the dry blend is sprinkled directly onto the fish, unlike brine salting, where salt and sugar are first dissolved in water. Salt and sugar draw water out of the flesh, which gives a firmer texture and lowers the water activity. Lower water activity makes the flesh more resistant to bacterial growth, and the sugar helps balance the flavor, for example in smoking, where it softens the strong smoke taste.

The right ratio of salt to sugar is as much about taste as it is about shelf life.

Areas of use

  • Salting cod roe
  • Gravlax
  • Processing salmon and trout
  • Caviar production
  • Smoking fish

Produced at the terminal in Ålesund

Sasomix is produced at Saltimport's terminal in Ålesund, under the management of terminal manager Sindre Eide. The plant has two hoppers, one for salt and one for sugar, which feed the raw materials into a screw where they are mixed before going into a tank. There the product is weighed and bagged precisely, and each batch gets its own batch number, so it is traceable all the way to the customer.

Roe and curing

Roe is usually preserved either with pure salt or with a salt and sugar blend. After salting, the roe is placed in barrels for further curing, and the curing time varies depending on the method and quality the buyer wants.

Delivery

Sasomix is delivered in 24 kg bags or in 1000 kg big bags. You can collect the product at the terminals in Ålesund, Bergen or on Vanna, or have it delivered directly by Saltimport.
